Grandma Palmer's Recipes

The following recipes are from the recipe book of our grandmother, Lulu (Shaw) Palmer (1884-1976).  These were in her own handwriting.  It is interesting to note that most are for desserts.  The book is in very poor condition (crumbly and brittle, all pages loose).  If anyone in the family would like the book, I will gladly send it to them.

(01) New England Squares

Blend:

2 cups graham cracker crumbs
1 1/3 cups ready to use mincemeat
1 1/3 cups Eagle Brand sweetened con. milk

Turn into well greased 9 X 13 X 2 pan
Bake at 350 deg. about 30 min.
Let cool in pan before cutting

(02) Pineapple Cookies

2 eggs
1 cup brown sugar
1 cup white sugar
1 cup Crisco
3 cups flour (or more)
1 cup crushed pineapple
1 cup nut meats (optional)
1 tsp. soda
2 tsp. baking powder
1 tsp salt
1 tsp. vanilla
cherries or dates if wanted

(03) Mince Meat Cookies

1 cup shortening
1 1/2 cups sugar
3 eggs
3 cups flour
1 tsp. soda
1/2 tsp. salt
1 1/3 cups mince meat

Drop by teaspoon

(04) Apple Sauce Drop Cookies

1/2 cup shortening
1 3/4 cup sifted flour
1 tsp. cinnamon
1/2 tsp. nutmeg and cloves
1 cup raisins
1 cup sugar
1 cup apple sauce
1 cup rolled oats
1 egg
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
nuts

(05) Pecan Pie

Lina a pie pan with pastry (pie crust)
Mix together:

2 eggs
1 cup Karo syrup
1/8 tsp. salt
1 cup sugar
1 tsp. vanilla
2 tbs. melted shortening
1 cup pecan meats (added last)

Bake at 400 deg. for 15 min.
Then 30-35 min. at 330 deg.

(06) Almond Crust Cherry Cream Pie

1 stick shortening
1/2 cup slivered almonds finely chopped
1 1/3 cups Eagle brand con. milk
1/3 cup lemon juice
1/2 tsp. almond extract
1/2 cup whipping cream whipped
Baked pie shell

Combine milk, lemon juice, vanilla, and
almonds.  Stir until mixture thickens.
Fold in whipped cream

Top with cherry glaze.
2 cups pitted sour cherries (drained)
2/3 cup cherry juice
1 tbs. corn starch
2-3 drops red coloring
Blend cherry juice, sugar, and corn starch.
Cook over low heat until thick and clear.
Add cherries

(07) Oat Meal Cookies

1/2 cup raisins
Cover with hot water and let stand 5 min.
2/3 cup butter
3 cups oat meal
1/2 cup sugar
1/4 cup milk

Shape into balls
Bake 15 min. at 375 deg.

(08) Peach Bavaria

1 pkg. lemon gelatin
1 cup boiling water
1 cup cold water
2 cups small marshmallows
2 cups diced canned peaches (drained)
1/2 cup sugar
1/4 tsp. salt
1 tsp. vanilla
1 cup whipped cream or topping

When jello has partially set, beat until fluffy.
Fold in marshmallows, fruit, and whip cream.
Add sugar, salt, and vanilla.
Combine all ingredients.
Chill 12 hrs. (not stirred)

(09) Royal Hawaiian Icing

Cream together:

2 tbs. shortening
1 tbs. butter
1/4 tsp. salt
1/2 cup confect. sugar

Add alternately:

2 1/2 cups confect. sugar
1/2 cup drained crushed pineapple

Beat until creamy

(10) Oatmeal Date Balls

1 cup butter
3 tbs. sugar
1 1/2 tsp. cinnamon
2  (8 oz.) pk. dates chopped
1 cup quick cooking oats
3/4 cup nuts chopped

Beat first three ingredients until fluffy.
Add dates and oats.
Refrigerate 2-3 hrs.
Hand shape dough into 1 in. balls.
Roll in nuts.
Chill.
Makes 3 1/2 doz.

(11) Pineapple Cake

1 egg
1/2 cup sugar
1 cup pastry flour
1 tsp. baking powder
1/4 cup Pet milk
1 tbs. melted shortening
1 tsp. vanilla
1 can crushed pineapple (6 slices)

(12) Applesauce Cake

1 cup sugar
1/4 cup butter
1 egg
1 cup unsweetened applesauce
1 cup raisins
1 cup nut meats
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1/4 tsp. salt
2 cups flour

Bake 50-60 min. at 350 deg.

(13) Cherry Pudding

1 can (pint) cherries
1 cup sugar

Boil:

Add:
1 pkg. Pillsbury cinnamon biscuits

Cover:
Cook 15 min. (low)
35-40 min. in oven.

(14) Relish

1/2 cup chopped maraschino cherries
1 (9 oz.) can crushed pineapple(drained)
3/4 cup chopped celery
3/4 tsp. ginger

Mix well and chill.

(15) Apple Sauce Bread

2 cups flour
3 tsp. baking powder
1 tsp. salt
1/4 tsp. cloves

Sift together and add:
1/2 cup chopped nuts

Beat together:
1 egg
1/4 cup brown sugar
1 cup applesauce
1/4 cup melted shortening

Add flour and stir only enough to moisten.
Bake 50 min. at 350 deg.

(16) Fruit Cake

1 cup water
1 cup raisins
1 cup sugar
1/2 cup butter
spices

Let it come to a boil.

When cool add:
1 tsp. soda
1 egg
2 cups flour

(17) Bread Cake

2 cups light bread dough
2 cups sugar
2 eggs
1/2 cup butter
1 tsp. soda
1 cup (or more) fruit
1 tsp. cinnamon
1 tsp. cloves

(18) Roll Jelly Cake

3 eggs
1 cup sugar
1 tbs. milk
1 tsp. baking powder
1/4 tsp. salt
1 tbs. melted butter
1 cup flour

Add butter last.

(19) Molasses Layer Cake

1 cup molasses
1/2 cup sugar
2 eggs
4 tbs. butter
1 tsp. cinnamon
1 tsp. cloves
1 tsp. soda
1/2 cup buttermilk
2 cups flour

(20) Coconut Cake Filling

1 cup sweet milk
When it boils stir in:
1 egg (well beaten)
1 heaping tbs. corn starch
2 tbs. melted butter
1/2 cup sugar
When thickened, let it cool.
Then flavor with vanilla
Spread over the layers and sprinkle thickly
with coconut.

(21) Caramel Filling

1 cup white sugar
1 cup brown sugar
Melt with cold water, boil until it threads,
then beat in:
2 tbs. cream
1 tbs. butter
1 tbs. vanilla
Take from fire and beat until quite thick.
Spread between the layers.

(22) Chocolate Cake

1/2 cup butter
1 1/2 cups sugar
Stir sugar and butter together.
2 eggs then cream them.
2 squares chocolate
1 tsp. vanilla
1 cup milk
2 cups flour
2 tsp. baking powder

(23) Cocoa Cake

1/2 cup butter
1 cup sugar
2 eggs
3/4 cup milk
3 tbs. cocoa
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
Sift flour, cocoa, and baking powder together.
Add lastly the beaten whites of eggs.

(24) Spice Cake

3 eggs (saving whites of 2 for frosting)
1/3 cup butter
2/3 cup sour milk
1 tsp. soda
1 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
1 tsp. ginger
2 cups flour
1 cup sugar

(25) Chocolate Loaf Cake

1 cup sugar
1 egg
1 cup butter milk
1 tsp. soda
4 tbs. melted butter
4 tsp. cocoa
2 cups flour

(26) Nut Cake

1 cup butter
2 cups sugar
3/4 cup milk
4 eggs
2 tsp. baking powder
1 1/2 cups chopped nuts
Add last:  lemon extract

(27) Checker Board Cake

1 1/2 cups sugar
1/2 cup butter
2 eggs
1 cup butter milk
1/2 tsp. soda
2 1/2 cups flour
1/2 tsp. baking powder
Vanilla

Divide and add to one part:
1 square chocolate
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. allspice
1/4 tsp. nutmeg

(28) Chocolate Cake (eggless)

2 cups brown sugar
2 cups flour
1 cup sour milk
1/2 cup cocoa
1/2 cup shortening
1 tsp. vanilla
Salt
Beat thoroughly then add:
1/2 cup boiling water

(29) Eggless Cocoa Cake

1 cup sugar
4 tbs. melted butter
Cream sugar and butter together.
1 cup sour milk
1 tsp. soda in warm water
1 1/2 cup flour
1/2 cup cocoa
Salt
Vanilla

(30) Fried Cakes

2 cups sugar
2 cups mashed potatoes stirred in with sugar
while hot.
Cool
2 tbs. melted butter
3 eggs
4 tbs. baking powder
1 cup sweet milk
Salt
Seasoning

(31) Ginger Bread

1/2 cup sugar
1/2 cup butter and lard mixed
1 egg
1 cup molasses
2 1/2 cups flour
1 1/2 tsp. soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
1/2 tsp. salt
1 cup hot water (add last)

(32) Pineapple Pie

Mix:
2 cups crushed pineapple
1 cup sugar
2 well beaten eggs
1 tbs. cornstarch
Cook stirring all time in double boiler until
thickened.
Add:
1 tbs. butter
Pour into baked pie shell
Egg white on top.

(33) Waffles

1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
Separate 2 eggs
1 cup milk
2 tbs. melted butter
Fold in egg white last.

(34) Cocoanut Jumbles

2 eggs (well beaten)
1 1/4 cups sugar
1 cup sour cream
1 tsp. vanilla
2 cups shredded cocoanut
3 cups flour
1/2 tsp. soda
3 tsp. baking powder
1 tsp. salt

(35) Graham Waffles

1 cup white flour
1/4 tsp. salt
1 tsp. soda
2 tbs. sugar
1 cup graham
2 eggs
2 cups sour milk

(36) Cherry Pudding

4 tbs. butter
1/2 cup sugar
1 egg
1 cup well drained cherries
1 cup flour
1 tsp. soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. vanilla
Beat and bake in small tube pan 25 min.

Sauce:
7/8 cup sugar
2 tbs. flour
salt
Mix well in sauce pan and then add:
1 cup boiling water
1 cup cherry juice and cherries
1 tsp. butter
Boil 1 min. and serve hot on pudding.

(37) Raisin Oatmeal Cookies

1 cup sugar
1/2 cup shortening
2 eggs
1/3 cup milk
1 2/3 cups oatmeal
1 1/2 cups flour
1 tsp. soda
1 tsp. cinnamon
1 cup raisins
salt
Wash raisins in hot water and drain.
Cream shortening and sugar. then add eggs
and milk.  Combine with oatmeal and raisins
and mix well. Add flour sifted with soda, salt,
and cinnamon. Beat thoroughly.  Drop onto
greased pans and bake about 12 min. in a
moderate oven.

(38) Apricot Jello Pie

1/2 lb. dried apricots cooked and drained.
1/3 cup sugar
1 pkg. Orange Jello
1 pint warm apricot juice and water
1/4 tsp. salt
1 baked pie apple
Combine apricots and sugar.
Dissolve Jello in warm apricot juice and water.
Add salt and pour over apricots.
Chill:
When slightly thickened, turn into cold pie shell.
Chill until firm.
Top with whipped cream and sprinkle with
cocoanut if desired.

(39) Salad Dressing (Sophia)

1 1/2 cups water
1/2 cup vinegar
4 tsp. flour (heaping)
2 1/2 tsp. salt
1 1/2 tsp. mustard
3 eggs
1/4 cup sugar
1 tbs. butter
Thin with whipped cream.

(40) Chocolate Cake

1 1/2 squares chocolate
Piece of butter (size of egg)
Melt together.
Cool:
1 cup sugar
1 cup sour milk
1 tsp.soda
1 tsp. baking powder
1 1/2 cups flour
1 egg
vanilla

(41) Graham Bread

1 cup sweet milk
1 cup sour milk
1/2 cup molasses
1/4 cup sugar
1 tsp. soda
1 cup wheat flour
2 1/2 cups graham
Steam 2 hrs. and bake 20 min.

(42) Graham Muffins

1 tbs. sugar
1 cup milk
1 cup graham flour
1 egg
1 tbs. shortening
2 tsp.baking powder
Bake in quick oven.

(43) Tillie's Favorite Cookies

2 eggs
2 cups sugar
1 cup sour cream
1 cup butter
1 tsp. soda
flavoring
Add flour enough to roll out .
Bake in a quick oven.

(44) Ginger Snaps

1 egg
1 cup molasses
1 cup sugar
1 cup lard
1/2 cup boiling water
1 tsp. soda
1 tbs. ginger

(45) Chocolate Cookies

1/2 cup butter
1 tbs. lard
1 cup sugar
1 egg
1/2 cup milk
2 oz. chocolate
1 tsp.cinnamon
1/2 tsp. soda
2 1/2 cups flour
1/4 tsp. salt
Bake in rather quick oven.

(46) Molasses Drop Cookies

2 cups molasses
1/2 cup sugar
1/2 cup shortening (scant)
1 cup hot water
1 tsp. alum dissolved in hot water
salt
ginger
cinnamon
Stir molasses and 2 tbs. soda together.
Then add dissolved alum and water.
Then sugar, lard, spices, salt, 1 1/2 cups flour.
Drop from spoon.

(47) Molasses Cookies

2 eggs
1 cup sugar
1 cup molasses
1 cup shortening
1/2 cup hot water
1 tsp. soda
2 tsp. baking powder in the flour
           (what flour ??)
spices

(48) Graham Cookies

2 eggs
2 cups brown sugar
2/3 cup meat fat
2/3 cup sour milk
little salt
1 tsp. cinnamon (heaping)
1 tsp. soda
Mix to a dough with graham and use
white flour on the board
Bake slowly

(49) Fruit Cookies

1 cup sugar
1/2 cup shortening
1/2 cup sweet milk
1 egg
3 1/2 cups flour
3 tsp. baking powder (level)
Beat to a cream.

Filling:
3/4 cup sugar
1 tbs. flour (heaping)
1 cup boiling water
1 cup raisins
Cook until thick.
Cool.

(50) Ginger Drop Cookies

3 eggs
1 1/2 cups sugar
1 cup boiling water
1 tbs. ginger
1 tbs. soda
1 cup raisins
6 scant cups flour

(51) Brown Sugar Pudding

2 cups water
1 cup brown sugar
butter (size of walnut)
1 tsp.vanilla

Dumplings:
1 cup brown sugar
1/2 cup milk
1 cup flour
1 tsp. butter
salt
1 tsp. baking powder

(52) Apricot Bread

1 cup apricots (soak 30 min., drain,
                        cut in 1/4 in. pieces)
1 cup sugar
2 tbs. shortening
1 egg
1/4 cup water
1/2 cup orange juice
2 cups flour
2 tsp. baking powder
1/4 tsp. soda
1 tsp. salt
1/2 cup nuts

Put greased paper in pan and let stand
20 min. before baking.
55-65 min.

(53) Grape Nut Tapioca Pudding

6 cups hot water
4 cups brown sugar
1/2 tsp. salt
Boil and add 1 cup minute tapioca, let cook
until done.
Add :
1 cup chopped nuts
2 cups crushed pineapple
1 1/2 cups grape nuts
Flavor with vanilla
Serve with whipped cream

(54) Banana Drop Cookies

1 cup sugar
1 cup shortening (scant)
1/2 cup sour cream
1 tsp. soda (scant)
2 1/2 to 3 cups flour
2 eggs (well beaten)
3 ripe bananas
1/2 cup chopped nutmeats
1 tsp. baking powder
salt
Cream together sugar and shortening, dissolve
soda in some cream, add to creamed mixture,
add eggs and bananas (mashed).
Sift baking powder, salt, and flour.
Add with nuts to above.
Beat altogether. Drop by spoon.
Bake at 350 deg. for 12-15 min.

(55) Cracker Pudding

1 qt. milk
1 1/2 cups sugar
2 eggs
6 Boston crackers (powdered fine)
1/2 lb. raisins
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 tbs. butter
a little salt
Mix and pour into buttered pudding dish.
Bake slowly 2 hrs.

(56) Pudding Sauce

4 tbs. sugar
2 tbs. butter
1 tbs. flour
Stir together to a cream.
Beat the white of an egg to a stiff froth and add.
Pour into the dish a gill of boiling water
stirring very fast.
Flavor with vanilla.

(57) Chocolate Tapioca

Soak 1/2 cup tapioca in cold water, then
pour on boiling water and cook until clear.
Add :
1 cup sugar
a little salt
2 oz. chocolate
When chocolate is melted and mixed with
tapioca, stir in lightly whites of 2 eggs.
1/2 tsp. vanilla
When cool serve with cream.

(58) Potato Salad with Cream

Take about 6 potatoes and cut them into
small dice, then mix with the chopped
whites of 3 hard boiled eggs.  Mix the yolks
with a scant tsp. of dry mustard and stir into
a cupful of sour cream.  Pour this over the
potatoes and mix gently.  No salt is added
if potatoes are cooked in salted water.

(59) Peanut Butter Cookies

1/2 cup shortening
1/2 cup peanut butter
1/3 cup brown sugar
3/4 cup dark corn syrup
1 egg
2 cups flour
3/4 tsp. soda
1/2 tsp. baking powder
1/4 tsp. salt
Chill:
Make into balls and flatten with fork dipped
in flour.

(60) Icing

18 marshmallows cut in quarters
2 oz. unsweetened chocolate
2 tbs. milk
Melt:

(61) Pressed Chicken

2 chickens, boil until the meat leaves the
bones easily, then pull to pieces and chop
fine, letting the liquor, in which they were
cooked, boil until only a cupful remains.
Add about one half as much chopped ham
as chicken; roll two soda crackers, pour
the stock over, seasoning highly.

(62) Frozen Pineapple Salad

1 1/2 cups crushed pineapple
1 pkg. orange gelatin
1/4 cup diced celery
2 (3 oz.) pkg. cream cheese
6 marshmallows diced
1/8 tsp. salt
3 pimentos (chopped)
1/2 cup chopped nuts
1 tbs. gelatin
1/4 cup lemon juice
1 cup whipping cream
water
fruit salad dressing
Drain pineapple.  Add sufficient water to the
juice to form 2 cups of liquid.  Heat to boiling.
Add orange flavored gelatin.  Stir until
dissolved. Soften 1 tbs. gelatin in 1/4 cup cold
water. Add to first mixture.  Stir until dissolved.
Add lemon juice and salt.  Mix thoroughly.
Chill until partially set.  Add pimentos, nuts,
cheese, celery, and marshmallows.  Mix
thouroughly. Fold in stiffly whipped cream.
Pour into molds.  Cover tightly.  Pack in ice
and salt.  Let stand 4 hrs.  Unmold, slice, and
serve with fruit salad dressing.  8 servings.

(63) Fruit Salad Dressing

1/2 cup syrup from canned peaches
1 tbs. sugar
2 egg yolks well beaten
1/8 tsp. salt
1 1/2 tsp. lemon juice
1/8 tsp. paprika
Heat peach syrup.  Combine egg yolks, sugar,
salt, and paprika.  Add peach syrup slowly,
stirring constantly.  Cook over hot water until
thick and smooth.  Remove from stove.  Add
lemon juice slowly.  Mix thoroughly.  Chill.
If desired other fruit juices may be substituted
for peach syrup.  Sweeten to taste.

(64) Mustard for Meat

1 heaping tsp. flour
2 even tsp. sugar
2 even tbs. mustard
1 egg yolk
Mix with cold water yhen add 1/2 cup
boiling water.  Boil until it thickens.
Thin with vinegar.

(65) Date Nut Bread

1 cup white flour
2 tsp. baking powder
1/2 tsp. salt
1 cup whole wheat flour
4 tbs. shortening
1/2 cup brown sugar
1/2 cup nuts
1/2 cup dates
1 egg
1 cup milk
Bake 1 hr. 350 deg.

(66) Banana Bread

1 egg well beaten
3/4 cup sugar
1/4 cup melted butter
3 med. bananas mashed
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
Mix in order given.
Bake 1 hr. at moderate temperature.

(67) Crullers

1 cup sugar
1 tbs. butter
1 egg
1 cup sweet milk
3 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Fry in deep fat.

(68) Cake Icing

2 1/2 cups sugar
1/2 cup Karo syrup
1/2 cup water
1/2 tsp. cream of tartar
Boil until it threads.
2 eggs beaten until stiff
Add above and beat until cool.

(69) Chocolate Cake

2 cups sugar
1/2 cup shortening
1 egg
3 cups flour
1 1/2 cups sour or butter milk
1 tsp. soda
1 tsp. baking powder
1/3 cup cocoa dissolved in hot water
1 tsp. vanilla
Cream sugar and shortening, add egg,
stir well, add chocolate, stir, add little flour,
stir, add milk and soda.  Add rest of flour.
Stir.

(70) Date-Orange Softies

1 (8 oz.) pkg. dates chopped
1/2 cup firmly packed brown sugar
1/2 cup butter
1/2 cup orange juice
1 tsp. grated orange rind
2 eggs
1 1/2 cups sifted flour
1 tsp. salt
3/4 tsp. baking soda
1 (6 oz.) pkg. Butter scotch morsels
1 cup chopped nutmeats
Cook first 5 ingredients over low heat,
stirring until moderate thickened.
Cool: Beat in eggs, sift flour, soda, and salt.
Stir in morsels and nuts.  Drop by
tablespoon on ungreased sheet.
Bake at 375 deg. for 10 min.

(71) Sunshine Salad

1 pkg. lemon jello
1/4 tsp. ginger
1 1/2 cups boiling water
1 1/4 cups pineapple
12 oz. creamed cottage cheese
24 marshmallows cut fine
Blend jello and ginger.  Add hot water when
creamy. Add cheese.  When quivery add
pineapple and marshmallows.  Chill.

(72) Cookies

2 cups sugar
1/2 cup Crisco
1/2 cup cocoa
1/2 cup milk
dash salt
Boil 3 min.
Add:
3 cups oats
1/2 cup nutmeats
1 tsp. vanilla
