Cora Baker’s
Receipt for Cabbage
1/2 cup vinegar
1/2 cup sugar
1/4 teaspoon mustard
1 teaspoon salt
1 egg
1 lump butter
1 Tablespoon flour
cook until thick
take off + put in 3 Tablespoons cream
cut cabbage fine
Receipt for Canning String Beans
boil beans for 10 min.
then put in cold water
put in cans
1 teaspoon salt for a qt.
fill with hot water
set the can in hot water + boil 2 hrs.
Mrs. Coons Cold Pack Beets
Cook beets until the hides come off good
cut in quarters
+ put in cans with 1 Tablespoon vinegar
and the rest water to fill can
cold pack thoroughly until hot through
Cold pack corn 3 hrs. without water 1 teaspoon salt to get a qt.
Grape Juice
scald a qt. can
in it place
1 cup washed grapes
1 cup sugar
fill can with boiling water
seal tight
ready for use in 6 weeks
For Pickles Good
1 gal. vinegar
1 cup sugar
1 cup salt
1/2 teaspoon Keyene
2 teaspoon alum pulverized
1 cup mustard
put on cold
Mrs. Dilliston Pickled Beans
cook beans in salted water not to much
Weaken vinegar
put in some sugar + turmeric
boil + put on beans hot
some mustard
Cora Baker’s Salad Dressing
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon mustard
1 Tablespoon flour
mix all together until smooth
add 1/2 cup vinegar
1 cup milk or cream
cook until thick
Wilted Lettuce
1/2 cup sugar
1 egg
1/2 cup weak vinegar
cook in skillet with salt pork grease
pour contents on lettuce
cover to wilt lettuce
Mrs. Simmons Bread Salad
dried bread run through the grinder
also 2 onions run through
4 Tablespoons melted butter
1 Tablespoon vinegar
salt + pepper
2 boiled eggs, one inside
+ one sliced on top
Corn Relish
1 doz. ears corn cut
1 small head cabbage chopped fine
4 large red peppers chopped fine
2 large green peppers
1 1/2 cups sugar
4 Tablespoons dry mustard
moistened with a little vinegar
2 Tablespoons salt
combine all ingredients
and cover with vinegar
boil 3 mins. pour in hot jars + seal
makes 4 pts.
Cold or Raw Chili Sauce Good - Florence Slater
1 pt. ripe tomattoes chopped
6 large onions
4 green peppers
mix, add 1 cup salt
let stand 3 hrs.
drain a while good
1 bunch celery chopped
1 Tablespoon pepper
1 1/2 lbs. granulated sugar
4 Tablespoons mustard seed
4 cups vinegar
then can
Bread + Butter Pickles
5 quarts sliced or chunk cucumbers
1 qt. sliced onions
2 or 3 peppers sliced thin
1. cup salt
cover with water
let stand 3 hr. Drain
5 cups sugar
2 teaspoon celery seed
2 teaspoon mustard seed
1/2 teaspoon turmeric
4 cups vinegar
2 cups water thicken with a little flour
heat juice + other together
boil 2 min.
pack in hot jars
Chunk Pickles
4 qts of cucumbers soaked in salt water overnight
stew until tender in weak vinegar syrup
3 pt vinegar
2 qt sugar
1 oz salt
cinnamon buds, allspice + celery seed
heat syrup for 3 days each pour over
Macarona
2 cups macaroni cooked in salted hot water
+ cool with cold water
let stand while you fix the other
10 1/2 oz can of condensed cream of mushroom soup
1 cup milk
1 Tablespoon chopped onion
1 Tablespoon chopped pimentos
1 Tablespoon chopped green peppers
1/4 teaspoon black pepper
1/4 lb. sharp cheese grated or cubed
1/2 can tuna fish
1 1/2 qt. baking dish 325 oven about 20 mins. serves 6
Farm + Home Chocolate Fudge
3 cups sugar
1 cup milk
1 teaspoon butter
when sugar melted add
4 or 5 Tablespoons cocoa or chocolate
stir + boil 15 mins.
take from fire
add some vanilla
stir till creamy
put on a buttered dish
cool
cut in squares
Frankie Tounsand Peanut Candy
2 lbs. brown sugar
1/2 lb. butter
1/2 cup water
1 Tablespoon vinegar
boil 25 mins.
then stir in 2 lbs. peanuts
pour on buttered plates + cut in squares
Clara Dilliston Caramel Candy Receipt
2 cups granulated sugar
1/2 cup cream
1/2 cup milk
1 Tablespoon water
let boil for 10 min
then put level teaspoon soda
boil until it forms a soft ball
little vanilla and stir
Molasses Candy
2 cups molasses
1 cup sugar
a lump of butter
Little vinegar
cook
try some in a cup cold water when right pour on buttered dish
when cool pull + cut in pieces
little soda just before pouring out
Lydia Moon Cream Candy
2 cups sugar
1 cup boiling water
a chunk butter size of a walnut
2 Tablespoons vinegar
try in water
pull
don’t stir
a little vanilla
Pop Corn Balls from American Woman Cookbook
3 qts popped corn
1 cup sugar
1/3 cup white corn syrup
1 cup water
1/4 teaspoon salt
1 teaspoon vanilla
pour this on corn when right consistency
Mrs. Bigelow Hard Soap
5 cups or 2 1/2 pt cold soft water
1 lb. lye mix in earthen crock or pitcher
when cold add 1/2 lb borax
1/2 pt ammonia
add slowly 2 qts of melted grease
stir
well have grease and lye near same temperature as possible
Receipt for Pheumonia
discovered by a Binghamton Physician
when he died he gave this receipt
5 cts of Petroleum Vaseline
5 cts oil cedar
1 Tablespoon camphor
1 Tablespoon of turpentine
mix thoroughly and apply to the affected parts covering with a hot
flannel
Tartamatic for ants mix with a little sugar
Sunflower seed ground + browned and steeped for whopping cough

3 Tablespoons flour
1 Tablespoon soda
mix well then add water to make a dough
just so it will not stick to hands

Meat Sausage
18 lbs. meat
6 oz. salt
2 oz pepper
1 oz sage
some sugar to make brown
Ham Brine - Dan Jensen
100 lbs. meat
4 oz salt peter
6 lbs salt
4 lbs brown sugar
4 gal water
leave hams in brine 6 weeks
Sausage - Carlton Lafever
50 lbs meat
1 lb salt
1/4 lb. pepper
5 Tablespoons sage
3 Tablespoons ginger
Ham Brine - Laura Symonds
100 (lbs) meat
1 qt molasses or 5 lbs brown sugar
9 lbs salt
4 oz pepper
5 oz salt peter
1 Tablespoon soda
To Corned Beef
Rub the beef with salt
and pack in a crock
pour in the following pickle enough for 25 lbs
2 1/2 lbs salt
1/2 lbs sugar
1/2 oz salt peter
4 1/2 qts water
mix
boil
remove the skum
let cool good before putting on
put on a heavy stone on the meat
Mrs. Lester Clark Receipt for Canning Beef
Cut in chunks
place a layer of meat in can
sprinkle with salt + pepper
and so on untill
can is full
have a large top can
put rubbers on + fill with hot water + seal tight
and cook 3 1/2 hr in a kettle of hot water or canner
Mrs. Schoonmaker Receipt for Canning Chicken
Take 1/2 of a chicken for a can or a whole one put in 3 Tablespoons water
+ teaspoon
salt for a qt can
cook 3 1/2 hrs in canner hot water
Can fresh pork without water
Curing Hams + Bacon
700 lbs meat
1 oz salt for each lb meat or 7 lbs salt for 16 lbs meat
3 oz salt peter for 100 lbs
2 heaping Tablespoons baking soda
3 lbs brown sugar
4 gal water
put all on stove let boil
then cool good and put on hams
leave the hams in brine 5 or 6 weeks
shaking crock often when taken out dry + smoke with cobs
Liniment for Cuts + Bruises
3 oz alcohol
1 oz laudanum
1 oz organom oil
1 oz camphor
3 oz beeswax
6 oz lard
melt lard + beeswax and stir in other ingredients
stir well

Laura is Doris's mother, Laura Dillisten Florance married to Uncle Deek.
Mrs. Simmons is Dolores's Gramma. Her Mom was Lulu Simmons
Mrs. Wheeler is Clair's Mom. Her first name was Nina.
Mabel Kelley was a dear neighbor up the hill toward Watkins on the
PreEmption Rd. Eleanor did housework for them when they got old, she used to
make a lot of strawberry shortcakes for them. Ask her about that sometime.
They had a nice farm and house about 2 miles from us on same side of Rd.
Ruth Seybolt and hubby married the same time your Grandma and Grandpa Rose
did and both celebrated 50th Anniversaries. Just good friends from around
Altay. Their kids went to school the same time all us kids did.
Nina is Nina Wheeler, Clair's Mom. A dear chubby lady who enjoyed cooking
and baking. We ate many dinners in their home when all of the kids were
young.
Emma was called Aunt Emma, probably Gramma's great Aunt.
Corda was Corda Moon, Grandpa Florance's relation. Lydia Moon and Roy
Emerson relation.
Mrs. Eleanor Coon bought Mrs. Dilisten's house next to our one room
schoolhouse. Fred was her husband and they had 3 daughters. Nice neighbors,
they came to our wedding. girls were teenagers then.
Em was probably Aunt Emma again.
Mrs. Dilliston was Doris's Gramma. We have pictures of her with Gramma
Florance in their bathing suites near Seneca Lake cottage.
Clara was Aunt Laura's sister, a Dillisten she married a Harris. John Harris
is her son {he is visiting Doris this summer /new wife.
Lydia Moon never married{Grandpa Florance relation}.She lived in Branchport
and always brought beautiful flowers from her garden when she came to visit.
Mother Florance of course would be Grandpa's Mom
Mrs. Bigelow was a neighbor in Dundee, right across the street {Hollister}
Laura Symonds was Claudia and Clarissa's Mom. They had a big tomato farm on
the main road into Dundee. Great neighbors. I spent many overnights with the
girls in their home. I miss Clarissa now {Eleanor and I went to her funeral
in Dundee}. Claudia phoned last week to tell me that Roy Anderson's wife,
Maxine had died. she had Alzheimer’s and was in Montour nursing home.
Don't know the others, have heard their names. Maybe Doris or Eleanor can
help.
